We cut off the fat and put the fat and bones in one bowl. In another bowl we put the meat that we were able to use for the stew. the usable meat was made a stew of with onions, tomato paste and various vegetables.
Chicken recipe (Spatchcock)
We learnt how to cut off aisle from the chicken wing. We then cut the chicken breast open after which the neck and ribs was cut off.
Sauce for spatchcock
· Pineapple chutney,
· Chopped fresh coriander,
· Coconut cream,
· White wine vinegar,
· Orange juice.
Malva pudding
· 3 cup flour,
· 4 tsp baking powder,
· 4 eggs,
· 1 tbs apricot jam,
· 1 cup milk,
· Salt,
· 4 tsp margarine,
· 2 tbs vinegar,
· 4 tots brandy,
· 1 cup sugar.
Cream sugar and butter. Add egg 1 x 1. Dissolve bicarb in vinegar. Add to butter. Add all ingredients. Mix well. Bake for 30 min in 180 degrees.
Malva pudding sauce
· 1 cup cream,
· 1 cup sugar,
· ½ cup milk,
· ½ cup water,
· 1 tsp rum,
· 1 tsp vanilla essence.
Cook all together and port over hot pudding.
