· Vegetables that grow underground you start cooking with cold water with the lid on
E.g. carrots, potatoes etc.
· Vegetables that grow above the ground, you cook with boiling water. You blanche it for 2 to 5 minutes.
· All green vegetables you cook with the lid off. This is so that the impurities can exit the vegetable.
· Mushrooms you don’t wash because it absorbs water. You wipe it with a soft damp cloth.
