Mayonnaise

Ingredients needed:

  • 13 Egg yolks,
  • 250ml White wine vinegar,
  • 200ml Oil,
  • 30 Mustard seeds,
  • 4 Pinches Salt,
  • 4 Pinches White pepper,
  • 10ml Dijon mustard.
Equipment used:

  1. Big mixing bowl,
  2. French whisk,
  3. Balloon whisk,
  4. Jar,
  5. Teaspoon.
Method for recipe:

  • Split eggs into two separate mixing bowls. Egg yolks in one and egg whites in the other.
  • Put the egg yolks into a big mixing bowl.
  • Whisk the egg yolks fast and slowly and the oil while whisking to prevent the eggs from splitting.
  • Add the vinegar and taste for required flavour.
  • Add mustard seed, Dijon mustard, salt and white pepper.
  • Mix everything together and taste for desired flavor.
Chef's tip:

  1. Mix fast to prevent splitting of eggs and oil.
  2. If desired you can add more or less of ingredients and add or remove and undesired ingredients.
