Mayonnaise
Ingredients needed:
- 13 Egg yolks,
- 250ml White wine vinegar,
- 200ml Oil,
- 30 Mustard seeds,
- 4 Pinches Salt,
- 4 Pinches White pepper,
- 10ml Dijon mustard.
Equipment used:
- Big mixing bowl,
- French whisk,
- Balloon whisk,
- Jar,
- Teaspoon.
Method for recipe:
- Split eggs into two separate mixing bowls. Egg yolks in one and egg whites in the other.
- Put the egg yolks into a big mixing bowl.
- Whisk the egg yolks fast and slowly and the oil while whisking to prevent the eggs from splitting.
- Add the vinegar and taste for required flavour.
- Add mustard seed, Dijon mustard, salt and white pepper.
- Mix everything together and taste for desired flavor.
Chef's tip:
- Mix fast to prevent splitting of eggs and oil.
- If desired you can add more or less of ingredients and add or remove and undesired ingredients.
