Pastry cream

Ingredients required:

  • 2l Milk,
  • 500g Sugar,
  • 6 Eggs,
  • 125g Corn flour,
  • 1tsp Vanilla essance,
  • 1pinch Cinnamon.
Equipment used:

  • Pot,
  • Enamel tray,
  • Balloon whisk,
  • French whisk.
Method for recipe:

  1. Switch on your1 stove plate on medium to high.
  2. Put your pot with milk and vanilla essance in, on the plate and bring it to the boil.
  3. Beat 6 eggs and combine with the sugar. Mix with balloon whisk in beginning and when about half way with pouring the required amount of sugar use the French whisk.
  4. Pour the hot mixture into the cold mixture.
  5. Add the pinch of cinnamon.
  6. Mix constantly while adding the hot mixture into the cold mixture.
  7. Spoon the mixture into the ready made pastry and bake in the oven (130 degrees Celsius) for about 10 minutes or feel to touch.
Chef's tips:

  • Instead of vanilla essence you van use 1tsp vanilla pods.
